Whole bunch-pressed, cool-fermented with cultured yeast in a small stainless steel tank. Quartz-green, this is 50% about place, 50% variety (or vice versa); it wings its way on pure Cape Grim acidity that serves to amplify citrus and apple fruit flavours, yet continues to remind you of its presence. As fresh as the day it was bottled.
