The grapes for 2013 Delamere Blanc de Blancs were whole bunch pressed, wild fermented followed by full malolactic fermentation and tiraging in October 2013. 5 years aging on lees and a low dosage of less than 2 grams allows the voluptuous flavours of the fruit to shine through. All Delamere sparkling wines are made in the traditional method with the Blanc de Blanc seeing a minimum of 5 years ageing in total before we will release it. This is a mature and sophisticated sparkling wine with apple, lemon and notes of baking spices that flow into an extended rich and complex finish.
Whole-bunch pressed grapes, wild-fermented and full mlf, tiraged Oct '13, 5 years on lees before disgorgement. It is riveting and racy, with spice and brioche notes balanced - and lengthened - by lemony acidity. It has the capacity to age for another 5 years for those seeking complexity, not freshness.

A complex wine that has spent six years on yeast lees. Deliciously nutty with fresh apple flavours plus a hint of oyster shell and sea brine. As the wine opens there is a lovely creaminess to the palate plus a little honey and toast. Rich and layered.
