Open-fermented, 25-30% whole bunches, 5-day cold soak, pressed when dry to maturation in French oak (25% new) for 12 months. Good depth of colour typical of Tasmania; a complex, powerful wine that is still seeking to repel all boarders; it starts well on the bouquet and entry to the mouth before stem tannins take control of the back-palate and finish.
