The fruit comes off four vineyards aged between 38 to 85yo, fermented separately, inoculated, on skins for about 9 days and aged 18 months in French and American oak (32% new). A melange of spicy dark fruit, bitter chocolate and cocoa, blackstrap licorice with a slight radicchio-char and bitterness following the tamarind-like acidity and oak-infused spices. The palate is full-bodied, buoyant with ripe tannins, some grip and dryness on the finish. Definitely needs protein as a match.
