The remaining fruit underwent semi-carbonic whole bunch fermentation. The juice was basket pressed to old barrels for 10 months maturation, then bottled with no fining or filtration. Redolent of baking spices, red currants, dried cranberry with a subtle hint of air-dried meat and potpourri. The palate is lithe and agile...a star is born!
