Like the Chardonnay this fruit is from the original vines planted in 1996. There are 3 different Pinot clones with 2 more clones due to come on stream with later releases. The grapes are cold soaked for 5 days and fermented in open vats with 20% whole bunches. It is then basket pressed to mature in French oak, 25% new and the remainder are between 2 to 4 years old. Ollie Rapsom is good friends with Shaun Crinion (of Dappled Wines, Yarra Valley) and credits him with being a bit of a winemaking mentor, and you can see the influence here. Pretty but subtle red fruits and forest floor spice pervade the nose. These lead to a deliciously delicate and savoury palate, which is not about sweet or jammy fruit but more of an interplay between elegance, structure and balance. Bottled with no fining or filtration.
