Minerality is evident, as a result of Santorini's unique terroir. Quite “austere” as wine, with the acidity being the back-bone of the wine, allowing it to age. Petrol notes and honey-suckle appear in aged Assyrtikos, similar to the German and Alsatian Rieslings.
HUON HOOKE
Light straw-yellow hue. Subtle savoury bouquet with some earthy, dusty notes - the terroir of Santorini - and on the palate it's oily and viscous in texture and has noticeable alcohol heat that lingers. It finishes dry. It smacks of fully ripe grapes with plenty of glycerol.
