2019 Jack's Shiraz was sourced from the family's Greenock, Marananga & Moppa vineyards. 64% Greenock fruit, mostly planted on red-brown earth over red clay. 24% from the calcareous soils of Marananga vineyard. 12% from Moppa Block 8 which is sandy soil over orange-red clay with thick gravely quartz stone scattered throughout soil profile.
Greenock vineyards are managed using sustainable practices and Moppa and Marananga vineyards following organic principles. Mostly hand picked with just a small amount mechanically picked from Home Block section. All vineyards are planted on own roots with various clones, some from the original 1890s planted Shiraz clone. Supplementary irrigation is only used when necessary. Greenock is cropped at 0.7 tonne per acre, Marananga yielded 1 tonne per acre and Moppa 0.5 tonne per acre.
Very dry conditions leading into the 2019 growing season. It continued dry through out spring and summer, vines were largely dependent on supplementary irrigation. Overall the vineyards maintained good health, yields were down by 65%. The low yields ultimately helped to keep vines in balance through the tough, dry and warm conditions.
The grapes were 100% de-stemmed and whole berries transferred into open top fermenters. Mostly small open top with hand plunging twice per day, balance in 5 & 8 tonne open top with 2 x pump overs daily and both receiving an occasional drain and return. After fermentation, (14 to 18 days on skins) the wine drained to oak barrels and skins were hand-dug to the basket press. A percentage of the pressings are blended back in to add more firm tannins for structure. 22 months in 3% new French, 50% seasoned French, 4% new American, 33% seasoned American and 10% seasoned French oak puncheons. Bottled unfined and unfiltered and is vegan friendly.
