A 1/3 assemblage of the 3 Jura reds: pinot noir, poulsard, trousseau. Whole-bunch pinot noir with the rest destemmed by hand. Made using the same process as 50 years ago: a long maceration, no pump-overs, pigeage, and fermented for 3 months on skins in a large 100yo, 2000 litre foudre - the same method as Stéphane's father and grandfather before him.
One of three reds without sulfur, the 2018 Arbois Rouge DD is a blend of the three grapes from Jura. It's a light red wine they produce to drink in the summer and is full of juicy red fruit, with a light to medium-bodied palate and a pleasant bitterness on the finish. It's dry and very appropriate for food. He tries to make very clean and precise wines in the non-sulfur line, and here it shows a more delicate and fruit-driven style. The Pinot Noir is fermented with stems, and the Trousseau and Pulsar are destemmed. They make 30,000 bottles of this.
