Crafted in Methode Traditionelle 100% pristine hand selected Chardonnay grapes were whole bunch-pressed, under went partial malolactic fermentation and batonnage in tank before bottling for secondary ferment. Wine was aged on lees for 5 years and has minimal dosage. Harvested: April 2012, Disgorged: October 2017, Alcohol: 11.6%, Dosage: 2g/L Pale straw with fine mousse and persistent bead. Gentle floral notes with a hint of seaspray. Crisp lemon and delicate granny smith apples provide understated complexity.
This goes for the jugular, unleashing straight chardonnay across an astounding 5 years of lees ageing, equipped with a judicious dollop of 2g/l of dosage. This is cool climate Australian sparkling, making sense in terms of its makeup, while resounding with drinkability. Orchard fruits, nashi pear gelato and tangerine, all ringing with an urgency across saliva-inducing acidity and a whiff of brioche. Profound.
