King Billy is without a doubt a winemaking indulgence. The winemakers are always ‘playing around’ in the cellar and this wine has come about by trying to show what the very best cabernet from oldest Mt Barker vines can look like.
Very simply. The best 4 barrels from many batches of Cabernet Sauvignon that have been held back, are bottled with low intervention and then matured in bottle for 3 ½ years. The extended maturation in bottle rather than in oak is a conscious move to ensure the wine develops complexity but without losing its vibrant fruit character. This wine is still really fresh, with a good deep colour and already belies its age. ‘Seamless’ is a descriptor that describes it well.
November 2019 Release
Best parcels of cabernet from the oldest vines on the estate. Matured in French oak, 50% new, for 14 months, then given 42 months in bottle prior to release. It's remarkably fresh given its age, but it's also full-bodied and powerful. Blackcurrant, gravel, gum leaf and fresh cedar wood characters cut a swathe through the palate before extending impressively out through the finish. The word authority springs to mind.
