Vinification
Traditional, partial vinification in wooden barrels (40%) leads to more complexity without premature oxidation. There is no malolactic fermentation, which enables the wine’s natural acidity to compensate the powerful character of the terroir.
Aging
Extended aging for about 8 years at a constant temperature of 12°C in the House’s historic cellars in Mareuil-sur-Ay. Dosage Extra Brut (4.25 g/litre) gives full expression to the vinosity and minerality of this exceptional vineyard.
Pale pink in colour, dense bubble ring, very fine bubbles. Fruity, generous nose expressing notes of peach and tropical fruit (papaya, passion fruit) leading into smoky aromas. A creamy, mineral texture. Initial aromas of fresh fruit (peach, citrus) develop into notes of light tobacco and white chocolate. The finish is fresh and elegant.
Cellar aged for nine years and put on the market only when perfectly mature, Clos des Goisses Juste Rosé can then be kept for several decades.
.

Disgorged in November 2017, the 2007 Extra Brut Clos des Goisses Juste Rosé continues to show brilliantly, unwinding in the glass with an attractive bouquet that mingles notes of red berries, cherries and apple with nuances of cut flowers, fresh bread and spices, without the riper, tropical top notes found in the 2008. On the palate, the wine is full-bodied, satiny textured and multidimensional, with extraordinary concentration, an incisive spine of acidity and a long, chalky finish. Charles Philipponnat adds that he used to think rosé aged faster, but he has come to believe that red wine phenolics "frame" the wine and in fact increase its potential longevity. Since Clos des Goisses is already arguably Champagne's longest-lived wine, who knows how far the 2007 will go.
Drink 2023-2055.
