The 2015 Blanc de Blancs is a pale straw colour with a soft green hue. This wine has a fine mousse and persistent bead. Aromas of green apple and a hint of cinnamon are complemented by a perfectly balanced palate of brioche and mineral flavours, underpinned with crisp apple like acid.
From the Pyrenees and Tasmania, cool-fermented in stainless steel, then part mlf in French oak, blended and tiraged for 18 months. You have to search carefully to find any mention of Tasmania, in tiny print on the back label, and even then no percentages given. Three gold medals, the only one with major credibility the National Wine Show '18.
