This cuvée comes from the oldest vines in the area. Their low yields deliver concentrated grapes, bearing a beautiful terroir identity.
Harvested when the temperatures are coolest, the grapes (syrah, cinsault, grenache, ugni blanc and rolle) are quickly brought to the cellar to be vinified in their prime freshness. During all these operations, the juices are protected from oxidation. The wines are then aged in stainless steel tanks for 6 months.
With a pale robe with soft pink reflections, Château Peyrassol cultivates freshness. Its subtle nose of citrus, vine peach, apricot and fine floral notes invites you to taste it. Its mouth of a beautiful density, delicate and lively, is distinguished by its balance and its elegant fat. It is punctuated by a fruity and long finish.
It accompanies fish soups, carpaccios and all grilled fish but can also enhance desserts made with small red fruits.
