Each variety, cultivated at low yield, is harvested manually and vinified separately. When they arrive at the winery, the grapes are sorted, then crushed before being gently pressed. The juices then take on a delicate pink color. After fermentation, the wines are aged in stainless steel tanks. The Clos Peyrassol rosé expresses all the refinement of the great Côtes de Provence.
Under its very pale robe with purple reflections, Clos Peyrassol reveals a complex nose: notes of white flowers and heather, vine peach mingle in an elegant bouquet. The round and fleshy mouth from the attack evolves with a beautiful fullness. It seduces with its finesse, its liveliness enveloped by beautiful roundness and its remarkable aromatic persistence.
It will form superb pairings with a carpaccio of scallops with limes, braised prawns with Espelette pepper, or a grilled sea bream.
