Sparkling wine is another Mandala's Yarra Valley cool climate trophy wine, with premium Sparkling varietals in the region varying according to the different varieties used during the winemaking process, as well as the length of time the wine is aged. The NV "M by Mandala" is a stunning blend of 70% Chardonnay and 30% Pinot Noir.
A classic combination of Chardonnay and Pinot Noir, the aromatics of this sparkling centre on green apples and bright citrus notes of lemon zest and lime cordial. Matured stone-fruits and a creamy mid-palate are brilliantly maintained with an extended finish of crisp, natural acidity and a fine bead. 12.5% alc/vol. Drink it with range of antipasti; cured meats, olives, sun-dried tomatoes and cheeses.
