Samuel Billaud is considered to be one of the select few outstanding producers in Chablis. His wines have a distinctive elegance, balance and complexity that is rarely achieved with such precision. Testament to this is Samuel’s ability to bring out the unique characteristics of each of his fantastic terroirs. The Petit Chablis vineyards are, on average, 30 years of age.
This Chablis has a sophisticated array of flavours from fresh apple, oyster shell minerality, fresh almond, white peach, citrus flavours to notes of iodine. The palate is driven by a great acidity and a textural mid-palate. This is very fine indeed. It pairs well with natural oysters, seafood or is perfect by itself as an aperitif. You can drink this wine now by decanting it 15 minutes before serving or it may be cellared up until 2025+.
