The resulting wines are elegant, fruit-driven varietals, complex in structure yet easily and irresistibly enjoyable.
100% wild fermented and matured in French oak for nine months. A lovely bouquet of white peach and pear with hints of honey and nougat. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. This wine drinks beautifully now and will benefit from cellaring
Wild ferment and matured in French oak for 9 months. Hits the spot with ripe fruit characters and mouthfeel and yet still holds something back. A fairly reserved young chardonnay, all lemon and grapefruit and a handful of spice. It does have depth however, and that brisk acidity is dangerously delectable.
