The fruit was picked at optimum ripeness in the cool of the night. Of the free-run juice, a portion was fermented with wild yeast in both new and aged French puncheons & barriques, plus a portion was fermented in stainless steel to maintain the lively fresh fruit characters.The wine matured for 9 months with regular stirring, before final blending and bottling. The resultant wine is a well-balanced, elegant modern Chardonnay.
Pale gold straw in colour. This wine displays lifted aromas of stone fruit and citrus blossom with subtle hazelnut. Fresh white nectarine and ripe melon carry onto the palate with bright fruit intensity and well integrated oak structure. Delicate hints of hazelnut are delivered by 9 months maturation in puncheons and barriques.
