Tribaut’s elegant touch with the pinot of the legendary crus of Aÿ and Bouzy, freshened with the zing of Avize, makes for a delightfully captivating rosé. He dubs his unique method ‘millefeuille’ (only in France!), blending pinot and chardonnay by layering the crushed grapes in the vat for warm maceration, just for a few hours to extract fruitiness and a pale colour, before bleeding and chilling for alcoholic fermentation. Landing in a new classy wide bottle, never has this distinctive method looked more triumphant than it does in 2013. It’s a beautifully fragrant, fine and characterful articulation of Aÿ and Bouzy, rising stature and presence of red cherry and strawberry fruit, beautifully laced with the brioche and vanillin of bottle age. Wonderfully fine chalk mineral structure and excellent length are elevated by the distinguished energy of Avize.
