Produced in the traditional Champenoise method from Pinot Noir and Chardonnay grapes and aged for over 5 years on lees. Disgorged February 2021.
At 6 years of age, this is a toned and taut, pinot-led take on Tasmania's East Coast. Red apple and strawberry fruit is set to a rigid spine of lemon-juice acidity, tempered by the gentle texture and subtle savoury complexity of old oak barrel fermentation. It concludes steely and firm, its acidity heightened by some fine phenolic grip, promising endurance in the cellar.

Mmmmm, warm and toasty biscuits. Green apple, lemon, white blossoms, honeysuckle and a touch of apricot. On the palate, the finesse of those floral and fruity characteristics join some mouthwatering acidity and that nutty, beeswax and praline finish that lingers and dances away. There’s something slightly saline which only adds to the complexity of vintage sparkling that Fred and the team continue to produce.
