The 60/40%, Chardonnay, Pinot Noir blend is sourced from Pipers River, Tamar Valley and Coal River. It has very good mousse, having spent a minimum of 18 months on yeast lees. It's mouth-filling, with creamy cashew notes, balanced by citrus zest and a dosage of 8.6 g/L. Serious non-vintage, great value.

Aromas of honeysuckle, citrus zest and fresh strawberries from the Chardonnay and Pinot Noir fruit. Extended time on lees during secondary fermentation contributes to more complex aromas of nougat and roasted nuts. The palate is balanced with delicate fruit flavour, fine creamy texture and refreshing natural acidity.
A perfect match with natural oysters drizzled with any of our cuvées (instead of lemon) or fritto misto with lemon aioli.
Handpicking, gentle whole bunch pressing, cool fermentation, 100% malolactic fermentation, complex assemblage and extended ageing on lees after bottle fermentation, all combine to produce a stylish and complex wine.
