Hand picked, sorted and fermented as whole berries with a stirring, 21 days on skins to glean colour, aromatic precursors and most importantly, real tannin, the lack of which is the bane of so much Australian wine. The oak, 20% new. Measured. Classy. Take note. Definitively Aussie after-dinner-minty, but the buffering of blackcurrant, Asian plum, carob and bouquet garni-saturated tannins works. Long, authoritative and age-worthy.
