Crushed lime leaf backed by a delicate fragrance of orange blossom and subtle oyster shell giving a bouquet that is zesty and fresh, yet also of great depth.
The palate is the tight and driven; with great balance, length and poise, true to the Castle Rock Estate style. There is a beautiful complexity and depth to the palate, created by the layering of acids: Lime juice, Granny Smith Apple, Soda Water. This core of natural acidity creates that great structure, finesse and length for the wine. There is a soft citrus pithy edge helping frame the back palate, accentuating a salty oyster shell finish. Lively, crisp and with an attractive delicacy now, this wine will blossom with age for at least twenty years.
