“Characterful, elegantly textural and mouthwateringly incisive, these are superb white Burgundies, and to my mind, Pillot is one of a handful of exciting producers who win Chassagne-Montrachet the title of Burgundy's most interesting white wine producing village today. That he stills flies somewhat under the radar—at least relative to the quality to be found here—is perplexing. What's more, that's bound to change, and sooner rather than later, so readers shouldn't hesitate to buy whatever bottles they can find.”
William Kelley, The Wine Advocate
“Domaine Paul Pillot is one of those producers making whites with a real gleam, a luminous clarity. I taste hundreds of wines in Burgundy week, and have to scramble through my notes to check in with my views on many of them, but with Domaine Paul Pillot I remember where the table was in the room, and where I was standing as the wine hit my tastebuds.”
Victoria Moore, The Telegraph
In recent years this has offered stunning value. The 2017 is true to form, and then some: a deep, layered and complex old-vine red Burgundy that is both delicious now and equally age-worthy. It hails from a single 0.94-hectare parcel of 40-plus-year-old Pinot Noir vines grown on the red clays of Les Grandes Terres (on the Santenay side of Chassagne). The clay-rich soil type here has long produced some of the finest and silkiest reds of the village, and, fermented with 30% whole bunches, the 2017 is really exceptional. In the context of modern Burgundy, it’s a ridiculous value.  The note below totally undersells the quality on offer. Yes there is some mouthwateringly fine, Chassagne structure, but there is equally waves of delicious dark cherry and iodine-scented fruit. Kills many a village wine from further north.
“Top Value. A more deeply pitched nose is quite similar with the exception of displaying nuances of black pepper. The sleeker and highly energetic medium-bodied flavors possess fine length on the dusty and youthfully austere finish. This is firm but not so firm that it couldn't be enjoyed after only 2 to 3 years of cellar time.”
89 points, Allen Meadows, Burghound issue 74
