The 1 tonne parcel of fruit was sourced from a long established vineyard located in Middle Tea Tree in the Coal River Valley. The single clone (777) Pinot Noir was hand picked and then destemmed (retaining 50% whole bunches), cold soaked for a number of days then allowed to undergo wild fermentation in open top fermenter. Gentle hand plunging once daily during an extended fermentation. Once the wine had fermented ‘dry’ it was basket pressed and transferred to older french oak barriques. The wine sat in barrel for 10 months on fine lees. Minimal Sulphur. No Fining. No Filtration.

Colour: Cherry, Ruby, clear
Nose: Strawberry, cherry, culinary herbs, spice with some barnyard and forest floor in the background.
Palate: Cherry, spices, blood plum with well integrated acid. Tannins are incredible fine and mouthfeel quite textural. Light to medium bodied wine with poise. Reductive characters add to the charm of the wine which shows excellent length and persistent and lengthy finish.
