Hand-picked, three clones, 100% wild yeast fermented in French oak (70% old, 30% new). After primary fermentation approximately 20% of the barrels had undergone malolactic fermentation to add complexity and soften the acid structure. The wine was matured 10 months on lees with frequent stirring to harmonize and add creaminess to the palate.
Fruit primarily sourced from the oldest vines in the vineyard with “pockets” of other areas added for additional complexity. A cool climate classic. Stone fruits are the standout, white nectarine in its youth, richer yellow peach as it ages. French oak is a constant. This is new world Chardonnay at its best.
