Select parcels off the Great Western Vineyard were fermented on skins (with partial whole bunch and whole berry) in open fermenters for 10 days, followed by maturation for 14 months in a combination of 3000 L vat, 500L and 225 L French Oak barrels (with 35% new oak).
Deep red with purple hues. A complex, perfumed nose of violets and dark fruit laced with sweet spice, freshly cracked black pepper and charcuterie notes. The palate displays mulberry fruit combined with tight, fine tannins, a core of graphite-like mineral texture and a backbone of well-integrated spicy oak. This wine is delicately poised yet powerful with a persistent length of flavour. Drink 2018-2036.
Small batch winemaking, open-fermented and hand-plunged, matured in French oak of various sizes. The mix of silk and satin provides exceptional texture, black fruits dominant, the length excellent, the balance a point.
