Exotically complex with hints of pawpaw, guava, grapefruit, jalapeno and dill. It’s fermented in old French barrels with natural yeasts, and with several months on lees, has both a creamy element and a passionfruit skin pithiness, with great acidity. Pretty serious stuff!
