Shiraz and 4% Viognier were field blended from our Murrumbateman vineyard, where deep granite soils and moderate climate produce ripe, vibrant fruit. A small proportion of whole bunches are used in the ferment to provide balance and structure to the plush fruit. After fermentation the wine is filled to new, one and two year old French Oak barrels for 12 months maturation. The resulting wine shows dense black cherry fruit, spice notes of clove, musk and pepper, and lifted bright florals.
From the Dark Horse Vineyard. 4% viognier. 30% new oak. Certified biodynamic. In an excellent place. The run of fruit, the prettiness of florals, the spread of tannin. Dense black cherry, clove, musk and sweet spice notes fill the mouth with succulent flavour. Tannin is fine, firm and ripe. Swirls of savouriness to close, but sweet ripe fruit continues its charge.
