'Above the quarry' - made from two lieux dits that sit above an abandoned limestone quarry.
Dessus la Carriere is made from two small plots with over 30yo vines; the west-facing Semon, and Paradis which faces due south. The two sites share a very unusual sub-soil of solid limestone rock; they sit above an abandoned lime-stone quarry. The age of the vines and the terroir of un-eroded rock make for a bracing, textbook expression of minerality. The extra ageing in stainless steel tanks creates more brioche/doughy complexity that this powerful wine seems to carry with ease.
Mineral, smoke, graphite and hints of soil-inflected tones add striking shades of complexity to the rich, broad 2018 Chablis Dessus la Carrière. Notes of lemon confit and wild yellow flowers and a touch of tropical fruit open up in the glass, adding further dimensions of nuance.
