2018 Cielo e Terra 3 Passo Rosso Organic, Puglia

Coming from Puglia region, 3 Passo Rosso is made from Negroamaro & Sangiovese grapes. This organic wine has its name derived from the 3 steps required to produce it:

1. Partial Appassimento (grape drying) to get more concentrated fruit flavours 

2. Over pumping of the must in a tank at a cold temperature to extract sweet tannins and dark colour

3. Ageing in oak to enhance smoothness and longevity.

2018 Ceilo e Terra 3 Passo Rosso is a deep red with garnet notes. Intense and complex bouquet with fruity notes of plum and jam and spicy tertiary hints reminiscent of vanilla and licorice. The palate is intense, with great structure, softness and a long finish. 3 Passo is a muscular wine, unique for its complexity and harmony. Drink it with flavourful first meals or red meats.
