Certain practices in winemaking defy logic. The word IMPAZZIMENTO stands for “going crazy”. The process of “GOVERNO” consists in adding some dried grapes to the must, to induce a second fermentation. Yeast literally goes crazy as sugar is their main nourishment.
15 – 20 years old vines located in the center – south of Tuscany.
80% SANGIOVESE, 15% MERLOT, 5% COLORINO
Ruby red. Marked notes of ripe fruit especially red cherries and an elegant touch of violet. It is a generous wine, full bodied, smooth and harmonious.
Drink it with game or red meat dishes. Serve at 16 – 18 degrees C.
