“30% was transferred as cloudy juice to ferment (wild) in old oak; the rest went into stainless steel. There's a significant amount of texture here and a vague sense of funkiness to match. Wild by ferment, wild by nature. Intense cooked apple, sandalwood, rose and citrus flavours roll through. It's both soft and characterful.”
