Harvested in a single pick from a single block in Saint Matthias vineyard, there is a real sense of Grigio texture in this wine. The majority of the fruit is wild fermented, 70% of the fruit is kept on skins overnight then split into batches for maturation. 30% of the fruit is fermented and matured in stainless steel, the remainder is evenly split between barrel and tank fermentations.
The aromas are led by white flowers, warm spices, nectarine and pear. The palate has a lovely slippery texture, offering cooked apples with baking spices and lemon peel, with a touch of saline minerality. A certain round softness to the palate and an unassuming but present line of acidity brings the wine to a deliciously dry finish.
