100% Estate Grown Chardonnay sourced from our high density planted vineyards… Wild yeast fermentation, full malolactic fermentation and 12 months maturation in French oak barrels 85% (10% new) and 15% tank. Blended after 12 months and settled in tank for six months for natural clarification prior to bottling without fining or filtration. Pale yellow in colour, this wine displays attractive floral notes and aromas of citrus, white peach, pear blossom with subtle smoky characters. The palate is rich, with tangy citrus pith, Beurré Bosc pear and white peach, interwoven with a chalky texture and nuanced minerality. An elegant wine, beautifully focused and complex, with a long powerful finish.
Sinapius
As for all, estate-grown (12 clones), hand-picked and a lengthy wild yeast-whole berry ferment. It offers a garden of spices alongside almost casual purity of varietal fruit, but the core of this great pinot is its mouthfeel and length created by the stealth of its oh so fine yet persistent tannins. There's no bombast here, just infinite class.
