Dasher + Fisher's Sloe combines hand-picked, juicy Tasmanian Sloe berries, steeped in a bespoke blend of the distillery's three core gins. The berries were flash frozen to break the skins and macerated slowly in the spirit. The vibrant macerate was then drawn from the top and hand-filled earlier this year. The 2020 season provided berries with a reduced level of sweetness, which for this release has allowed the complexity of the fruit to really shine through. The result is something pretty damn unique.
The long maceration means that Burgess is able to extract exemplary natural sweetness and velvety fruit tannin, giving his spirit an intensity and depth seldom found in the category. Furthermore, Burgess does not press the berries, which makes for a very different extraction. Beautiful sipped on its own, this also makes a killer Bramble, and it's a top-drawer cocktail ingredient in general. It also possesses the intensity and harmony to pair with strong cheeses--think goats cheese, English blues and farmhouse Cheddar--and even chocolate-based desserts.
