D + F's Strawberry Gin was developed in 2018 when local strawberry farmers were impacted by quarantine and later, national food sabotage issues. Due to the restrictions placed on regional growers and producers, large quantities of quality fruit were unable to be sold conventionally. Enter George Burgess.
For this Gin, Burgess macerates strawberries (Fragaria x ananassa) from north-west Tasmania for several weeks in a bespoke D+F Gin base (made with 19 botanicals). A little sugar was added at the end of the maceration to intensify the flavour, add sweetness and aid juice extraction from the fruit. The result is an intense, lush and balanced Gin liqueur, dripping with lifted strawberry notes and floral undertones. The purity and class of all of George Burgess' Gins is there in force, only here the finest Tasmanian strawberries are front and centre. It's perfect with some light tonic or served neat on the rocks.
