Made from the young vines at Lyons Will planted in 2013, we are seriously impressed with this wine - especially as it’s only the second vintage produced. Handpicked, destemmed and left on skins for 5-6 hours before being basket pressed to old oak barrels for fermentation. The wine is then aged on lees in barrel for 3 months, before being transferred to stainless steel for another month of lees contact. Notes of Bickford’s lime juice concentrate, delicate white/pale yellow florals with a hint of green pea and freshly cut grass loitering in the background. These pretty, lifted notes are balanced by a taut slate mineral vein of acid and perfectly offset by a hint of residual sugar. It has beautiful balance and finesse, with texture and weight derived from the combined barrel ferment and touch of rs. Only 130 cases produced.

Hand-picked, destemmed, 6-8 hours skin contact, fermented in used oak, matured for 3 months. Bright straw-green; the vinification may have helped with the acidity (which is quite soft), but hasn't impacted on the juicy citrus and lemon curd flavours. The indicative response is simple - just drink it.
