It is a pleasure to witness both varieties being extracted with vision and gumption: thrice daily plunging with no temperature control; post-ferment maceration of 19 days (cabernet 65%) and 14 (touriga), before 24 months ageing in barriques (20% new). The result is sumptuous. Mid to fully loaded, with red to dark berry fruits cascading along mocha-laced tannins of real pedigree and palate-whetting firmness.
