The grapes for 2016 Paradise were hand harvested on 29th March & 13th April 2016, and were de-stemmed into an open top fermenter and left to cold soak before fermenting. After fermentation the wine was aged in French oak barriques for 10 months before the Paradise portion of this wine was selected. The wine was bottle-aged for a further 30 months before release.
The 2016 vintage is dark purple with purple hues. The wine has fragrant aromas of blackberry, plum, raspberry, vanilla, spice and elderberry on the nose. Rich dark cherry, plum, re currant, vanilla, violets and raspberry show on the palate. A concentrated mouth filling wine with a complex mid palate, fine grain tannins and a long finish.
Food match: rabbit, duck, lamb, or sip and contemplate by itself.
Complex bouquet of Pinot Noir with strawberry and red cherry, plum, old rose, dried herb, thyme and brown spices ….equally complex on the palate with layers of flavours and textures from roses and plums to cherry, tea and brown spices. Fine tannins …..and a long finish. Drink now through 2025.
