2021 Dandelion Wishing Clock Sauvignon Blanc, Adelaide Hills

White-bright, clear, yet with an unctuousness when swirled in the glass. Dawn’s freshly cropped guava, Kiwi fruit, and rockmelon, all still dew-dripping. Spearmint, mint, apple-mint, and Vietnamese mint - there is a piquancy about the otherwise pure aromatics of this clean, clear white wine. And a dry palate. Sauvignon Blanc as it should be. Fruit notes of nettle and dandelion leaf; a soft rain-water texture that lingers across the palate. Yet in the midst of it all is an intensely coiled core of fruit exotica, which seems to pass through one’s palate in close but welcome orbit. Purity is this wine’s intention, and its reward.
