This fixation led to the serendipitous discovery of a mysterious clone of Chardonnay, grown in the deep south of Margaret River, where the calcareous soils overlay limestone and the Southern Ocean brings persistent cloud and biting cold winds.
Idée Fixe is crafted from the premium, free-run cuvée of handpicked Chardonnay and meticulous méthode traditionnelle winemaking. A light, elegant form is revealed in the soft, pale yellow hue and persistent fine bead. Mineral vivacity and a crisp, refreshing mousse create a delicious palate of layered sophistication where fruit purity and savoury complexity achieve delightful harmony.
