Dijon clones from the Channybearup vineyard in Pemberton. Hand picked, whole-bunch pressed direct to barrel, left on lees for 8 months. (I rarely comment on numbers, but 3.14pH and 8.21g/L of acid should tell you a little something about what we're dealing with here). Pemberton has an uncanny knack for concentrated flavour in white wines particularly, and the Dijon clones express so beautifully here. It tastes like malo has been blocked (although no mention), which makes for mouth-puckering drinking right now. Having said that, the fruit is so intense that there is a strange balance achieved here. Saline, fine, taut and pure ... a classy wine to the very end.

The fruit was hand harvested and whole bunch perssed directly to oak. natural yeast wwere used in new and used French oak barrels. The wine was rested on lees with mineal preservatives added 8 monthls prior to bottling.
A delicate structure to this lightly-oaked wine allows the gentle intensity to shine. Beautifully balanced and sine with a seamless palate and a very long finish. Thoroughly modern in style with complexity, grace and a silky mouth feel.
