By contrast with the might of the Barossa, it may seem counterintuitive to throw 100% new oak at this spicy Adelaide Hills fruit, but the marriage here is exemplary. Plush black plum and black cherry fruit sits comfortably in a finely crafted French oak framework, uniting in a finish of great line and length.

Two key factors give rise to the stylistic consistency that is the single vineyard Voices of Angels. The first is that 10-15 % whole bunch is used in the fermentation, the second is the inclusion of 3% Riesling off the same block and of the same vine age as the Shiraz. This has been the treatment of this fruit over the last 25 years. Ageing "sur lie" for the full maturation period, in 100% new French Oak, builds and richens the structure and mouth feel before settling to achieve natural clarification.
