For this special release certified organic Cabernet Sauvignon and Merlot grown on the cool hillside in Orange NSW was sourced. The bright, floral, aromatic nature of the Merlot was wonderfully suited to the rich, cool velvet nature of the Cabernet. The wines were fermented separately in open oak fermenters, pressed gently, then blended together after malolactic fermentation was complete.
This classic Bordeaux blend of Cabernet and Merlot delivers an exotic aroma of ripe raspberry, dark plum and spice. Whilst the palate enhances the complexity with leafy berry and earthy notes with a glossy, juicy finish.
