Hand-picked fruit from 8 mature vineyards, chilled then whole-bunch pressed on a slow champagne cycle for 4 hours; inoculated with neutral yeast and left on fine lees until bottling in the last week of June ’21. Always reliable and a very good go-to drink, because it’s juicy and refreshing without any brittleness to the acidity. It’s also full of freshly squeezed Indian limes and wet pebbles with a touch of lemon curd. The finish is impressively long.
