Machine harvested, as is most stuff out Coonawarra way. Whole berries in the ferment with 21 days on skins before transfer to French oak for 15 months (30% new). And yet, not everything has to be gentle! This is cabernet, after all! Feels medium weighted in a nourishing, savoury way, Mint, currant, menthol, anise and garden herb. The tannins are refined, detailed and attenuated, growing of stature with air. This will reward time in the cellar.

The ‘Calcare’ Cabernet Sauvignon is selected from the best rows of our small vineyard from the world famous Coonawarra region. The renowned quality of Coonawarra is a product of its thin rocky soils and underlying soft crumbly limestone (Calcare) which naturally produces balanced vine canopies and small crops of intensely flavoured fruit.
A fine example of Coonawarra style displaying ripe cassis fruits with lifted spice and florals. A fine structured Cabernet that will gain further complexity with cellaring.
