A cult following wine, with Fairbank being one of the early Australian champions of the pale and dry style. Sutton Grange dedicate a section of the vineyard around some gumtrees to the rosé, rather than it being a by-product from other red wine production.
It's made up of 35% Cabernet, 30% Shiraz, 25% Sangiovese and 10% Viognier.
The fruit is whole-bunch pressed and left in cold soak overnight. Wild yeast cold ferment in old French oak over 3 weeks, then left on lees for 3 months.
