A blend of 58% chardonnay and the rest, pinot noir, this is a brooding wine of incredible depth and complexity. Founded on an extended period on lees, well in excess of a decade, it billows across the mouth as a plume of creamy nourishment. Toasty and rich, the bead of fizz is relentless from fore to aft, serving as a carriage for notes of honeysuckle, orange blossom, ginger and brioche. This rivals a very fine champagne, without the febrile acidity.
